I love October. The northeast is so beautiful this time of year. The crisp cool air, hot chocolate, warm sweaters, starry nights. I also love it because standing over a hot stove actually sounds fun again! You've got to try these great autumn recipes I found...they were easy and so delicious!
Citrus Whipped Yams
8 medium yams, cooked, peeled and mashed
1/2 cup sugar
1/2 cup orange juice
3 Tablespoons butter
1/2 teaspoon nutmeg
1/4 teaspoon salt
Blend together all ingredients except yams in saucepan and heat until sugar dissolves. Stir into mashed yams. Serves 8.
Autumn Wild Rice
2 (6-ounce) packages long grain and wild rice mix
1 medium red or green apple, unpeeled and diced
1 green onion, minced
1/4 cup dried cranberries
1/4 cup sliced almonds, toasted
1/4 cup (1/2 stick) butter, melted
2 teaspoons poppy seeds
1 teaspoon grated lemon rind
1/2 teaspoon cinnamon
1 tablespoon apple juice
In medium saucepan, cook rice according to directions on package. In a large serving bowl, combine apple, onion, cranberries and almonds. Add cooked rice and toss to together to blend. In a small bowl, combine melted butter, poppy seeds, lemon rind, cinnamon and apple juice. Pour over rice mixture and toss to combine. Serve immediately.
