Best cookies ever! [Serious claim, I know, but I'm telling you--they won't disappoint!]


This cookie recipe I've made many times before, but today we experimented a little and oh baby! I think I've found my new favorite cookie...The recipe calls for you to first cream and then add ingredients...but I've tried it both ways and trust me it's exactly the same if you do it the way I do: Throw everything into the bowl, turn on the hand mixer. Please try them and let me know what you think! Until then, I'm off to the gym!

Hot Chocolate Gooey Cookies

1 (8-ounce) brick cream cheese, room temperature
1 stick butter, at room temperature
1 egg
1 teaspoon vanilla extract
1 (18-ounce) box moist chocolate cake mix [I use Betty Crocker Triple chocolate]
Hot Cocoa mix [I used the regular store brand canister hot cocoa mix]

Preheat oven to 350 degrees F.
In a large bowl with an electric mixer, cream the cream cheese and butter until smooth. Beat in the egg. Then beat in the vanilla extract. Beat in the cake mix. Cover and refrigerate for 2 hours to firm up so that you can roll the batter into balls. Roll the chilled batter into tablespoon sized balls and then roll them in hot cocoa mix. Place on an ungreased cookie sheet, 2 inches apart. Bake 11 minutes. The cookies will remain soft and "gooey." Let cool. EAT!

You gave me this recipe a while back and I made them for a RS function... they were a hit to say the least! YUM!

I have never made these with CHOCOLATE mix ... def. adding these to the to do list. ps - i am Brooke's friend not some random person snooping on your blog but I must tell you I have used some of your recipes for Thanksgiving before (from brooke!) and can't wait to try the new ones from lovelife! Thanks! :)
