Favorite things...

I could eat this for breakfast + lunch + dinner :
{courtesy of my sis Brooke - who always has 'da bomb' for recipes}  I put my twist on the original just a teeny!
WHITE CHICKEN + BEAN SOUP with LIME
3 chicken breasts, cooked + cubed
2 (40z) cans green chilies
1 can hominy
1 can great northern beans
1 can white kidney beans
1 1/2 t. lime pepper or lemon pepper
1 t. cumin
1 clove garlic
1 cup chopped onion
2 T. olive oil
4 T. lime juice, plus one lime for garnish
1 can chicken stock
1 1/2 cups water
1 can white shoepeg corn

In small saucepan fill with water, drop chicken in + cook. In large pot saute the onion in the oil until translucent. Add the spices + garlic + stir. Add all canned ingredients, plus the water + stock. Bring to a boil then lower to simmer. When chicken is cooked, take out and cube then add to soup. Just before serving add the fresh lime juice and stir well. 

Garnishes :: {any or all}
:: Sour cream :: Salsa :: Avocado :: Cilantro :: Crushed tortilla chips :: 

Side dish ::
Flour tortillas brushed with a little EVOO, sprinkled with salt + pepper toasted in a skillet on both sides fill them with lots of cheese, tomatoes, cilantro + fresh {cooked} corn on the cob, cut them in wedges, serve with soup.

I had to leave a comment this time! I don't blog but I enjoy reading yours and a few others- thanks for being open. I fell in love with the same material you used for your way too cute skirt. We made a bady blanket in young womens with it. I found your blog through Suzy and Joe, Joe is my bro. I live in St. George and loved the entry your brother wrote awhile back about living here. I'm also addicted to the daily updates from cjane enjoy it, what an inspiration!! You bloggers rock!

oh! P.s. I didn't comment on the skirt - but I love it! You are amazing! Hopefully someday I will have a little girl to make skirts for. Love the fabric choices.

Cute post. I love seeing what everyone else bookmarks, it's usually how I find my favorite things, too.

You can take as long as you like to decide on your picture. I'm a little overwhelmed for this next month anyway with the A-Z AND contest entry due in one month! {nervously biting my nails about that one!} If you already have some ideas but need help picking something just email me and I'll ponder them awhile.

YUMMY - I can't wait to make that soup!! AND I'm SO excited - I have talked to quite a few people who are signed up for... JAMIE'S PHOTOGRAPHY!! My one friend said you only had 2 spots left! That's amazing - can't wait to see the results!! :)
