I'd have to say these are some of my favorite mornings.
Still in my pjs, busy with boys + baking.
This Chunky Monkey Banana Muffin {that I made into mini bread loaves} recipe we tried today was sooo good.
Going in the tried + true for sure:
1 c. sugar
2 whole eggs
1 T. vanilla
4 whole bananas, mashed
3/4 c. buttermilk
1 c butter, melted
3 c flour
2 t baking powder
1 t baking soda
1 t salt
2 T cinnamon
1 c sweetened shredded coconut
1 c chocolate chips (I didn't add these, maybe next time)
Preheat 350.
Cream eggs through butter. Combine dry ingredients. Mix together just until flour disappears. Fold in coconut + chips. Place in lined muffin tins or sprayed loaf pans + bake for 20 min. or until toothpick comes out clean.
Brody's been sick this week. So we have been doing quite a bit of this...
{For preschoolers - we love this computer learning center on the net. Brody will sit + answer math questions for 30 minutes at a time, he loves it + can do most of the kindergarten questions. IXL.com - questions adapted for ages preK thru 8th grade, good one.}

Ooooh, we'll have to try that site out for Carter. I've been wanting to find a good one. And we'll definitely be trying the banana bread. Yum!
I have bananas waiting....the coconut....how strong is it, can I trick Andy into it?
I knew Andy was not into coconut - pretty strong - you could leave it out - did you?!
